When I first stopped eating dairy, I thought that would be the end of so many delicious treats. Generic fudge is like 80% butter. How on earth could I replicate that flavour without dairy butter?!
But I’ve got some good news. Well, I think it’s pretty exciting anyway. Because I love fudge! It’s one of the easiest desserts to make andddd this version is vegan! Dairy free peanut butter chocolate fudge!
1/2 cup vegan butter*
1 cup peanut butter (or nut butter)
150g vegan chocolate
*You can use coconut oil if you prefer.
1. Melt the butter and chocolate, then stir in the nut butter.
2. Line or oil up a tray/moulds that will fit in your freezer. Pour the mixture into it.
3. Place in the freezer for half an hour to an hour.
4. Tadaaa! You’ve got fudge! Keep in the fridge until you’re ready to eat it up.
